After the latest travel update and seeing that many more countries are now on the UK’s green list* (wahey!), of course it’s got me thinking about where I want to go next.
I have developed such a love of hotels with laid-back luxury over the years, and whilst my budget can’t always afford it, it doesn’t hurt to dream does it?
There are countless places on my must-visit list, but here are five hotels in Europe that I’m desperate to stay at one day soon.
*The green list allows quarantine free travel from the UK during the pandemic.
Oku Hotels, Ibiza & Kos
First up, Oku Hotels. They are forever popping up on Instagram tempting me with their chilled day beds, palm forests and deep blue lagoons.
They currently have two hotels, the first in Kos, Greece and a second which just opened up on the Spanish island of Ibiza. Kos is where I want to go first, but I wouldn’t say no to Ibiza either. I fear that once I’m there I’ll never want to leave.
Also just making a mental note to design my future house just like this, regardless of the fact I live in a British town.
Hooga Hotel, Greece
A very similar design to the Oku brand, is Hooga. I discovered this gem recently when I was browsing potential Greek holidays for the summer, but had to abandon that when the last three travel updates have seen Greece remain firmly on the amber list.
The Hooga Hotel is located in Preveza, on a sandy stretch of west coast Greece. With the Ionian Sea just steps away, and the most beautiful hotel complex where you can sit back, relax and work your way through the drinks menu, it looks absolutely idyllic.
I’ve made a pact with myself that I *will* visit this spot in the next two years.

Hoxton Hotels, Southwark London & Paris
Having recently stayed at my first ever Hoxton Hotel in Shoreditch, London, it’s safe to say I’ve got the Hoxton bug and need to experience more of their stays.
So this is a cheeky two in one, but I’ve got my eye on both their Southwark London hotel and their Paris hotel. I’ve heard incredible things about both, and as long as they have that same silky marshmallow bedding, I’ll be very happy.

Nakar Hotel, Palma de Mallorca
Palma had never been in my bucket list until the lovely Jess from The Layover Life visited for her engagement. Her post on the Nakar Hotel sold me the trip and ever since I’ve had this spot on my wishlist.
As if their turquoise rooftop pool wasn’t good enough, the hotel is finished with a light-wood and black accent design, which I think is so beautiful for a warm escape to Mallorca’s Old Town.
We’re due to be visiting Palma in July and I’ve booked us one-night here as a treat, as it’s a little above our usual hotel budget. I’m keeping everything crossed that we get to go so I can spend a few evenings sipping on sangria under the heat of the Spanish sun!

Casa Cook, Rhodes
Clearly I need to get myself to Greece soon because I’ve now got three Greek stays on my bucket list. This one from Casa Cook is the ultimate goal. It would set me back a fair bit of budget, but this is laid-back luxury at its finest.
If you ever need a break where you can fully switch off, explore at leisure and soak up the sunshine – this is it!
I’ve never been to Egypt but they also have a resort there which looks just as beautiful.
